Andover residents are hungry for Mexican food.

I’ve been getting lots of e-mails recently from people asking, no demanding, to know when the new Los Cocos Mexican Restaurant, which has been in the works since fall 2014, will open. Those who travel on Kellogg have been watching it progress and have noticed lately that the building is nearly complete on the outside.

The answer from owner Luis Alfaro: Construction should be done by next month.

Alfaro, who finally broke ground last fall on his third Los Cocos just in front of the Dillon’s store on Kellogg in Andover, said that he thinks the restaurant will be completed in mid-July. After that, he’ll do some training then wait for all the needed permits to choose an opening date. Training won’t take long, though.

“We already have people training on our Wichita and Derby locations, so we don’t have much training to do,” he said.

The building is 5,000 square feet and should seat about 170 inside and 25 outside.

Alfaro opened his first Los Cocos in 2007 at 1335 N. Tyler. A Derby location, which is at 1257 N. Rock Road, followed in 2011.
