Qdoba construction underway; March opening expected

At least a few people in Wichita are excited about the impending arrival of Qdoba Mexican Grill, a build-your-own burrito restaurant going in the former Yen Ching space at 430 N. Rock Road. One is so excited that he tweets me every other day asking for an update.

I got in touch with franchisee Eric Estes, who has been busy getting Qdobas going in nearby city. He just opened a Hays store, and Hutchinson’s opened in June.

Originally, he’d planned to have the Wichita restaurant opened by August. As you can see from the picture here, construction is underway on the building, now just a shell of its former Yen Ching self. But winter weather is slowing things down. It’s likely the restaurant will now open sometime in March, Estes said.

I’ll stay on top of the developments, Qdoba fans.
