Brandon Steven recruits favorite Las Vegas food truck operator to open restaurant in Wichita

The Genesis Health Club at 1551 N Rock Road has a new restaurant that specializes in healthy, clean foods and is open to the public, not just to gym members.

It’s called All American Dave, and it’s run by a Las Vegas-based food truck and food delivery business owner who impressed Genesis owner Brandon Steven when he was playing in poker tournaments there.

Dave Swanson, a former personal trainer, started cooking for his clients in his kitchen. About five years ago, he began a healthy food delivery business, and some of his best customers were poker players competing in the World Series of Poker. That’s where he met Steven, a regular on the World Series of Poker circuit.

Swanson eventually opened a Vegas-based food truck serving his healthy offerings and even fitted it with a basketball hoop, a dip bar and a pullup bar in the back.

His business grew, and he wanted to expand into a brick-and-mortar location. Steven suggested he start in Wichita and replace O’Naturals, the former in-club restaurant that was going out of of business.

Swanson is in Wichita now, slowly opening the new restaurant. People can order food now, and he plans a grand opening in November.

His recipes are made, he said, with grass-fed beef, free-range, air-chilled chicken and healthy ingredients. One section of his menu is made with no butters or oils, is all lactose- and gluten-free and has ideal proportions of proteins, carbohydrates and fat. Examples: a bun-free, six-ounce burger patty topped with grilled onions and avocado served with a side of sweet potatoes and fresh steamed vegetables, and almond Dijon chicken served with avocado, brown rice and fresh steamed vegetables.

He also has a “cheat-day” menu made up of items like grilled fish tacos, sliders and grilled-cheese sandwiches reinvented with healthier ingredients.

“We just bring a really natural approach to the food,” he said. “We keep it simple and clean, and our menu changes a little bit each day.”

Swanson, who’s looking at expanding into cities like Austin, Boston and Los Angeles, says he is remaking the seating area in the restaurant and eventually wants it to be a healthy sports bar, with beer, wine and mixed drinks and healthier version of items like chicken wings. He also has plans to offer delivery to other Genesis gyms and to private homes in Wichita. The restaurant will be open whenever the gym is open, and it’s open to the public.
