A zesty new burrito business has just popped up in Wichita’s Delano district

The popular television show “Arrested Development” had The Banana Stand. Wichita now has The Burrito Stand.

The little business within a business opened a week ago inside the “Little House” that sits on the patio directly west of the Shamrock Lounge, a longtime Delano bar owned since 2018 by “Arrested Development “ fan Justin Brown.

For years, Brown has used the house as a place where his bar patrons could order dinner from a pick-up window, and he’s welcomed a variety of different pop-up vendors to set up there. Most recently, the house’s recurring pop ups have been Angie Bence’s Angie’s Tacos and More, which offers tacos, burritos and nachos on trivia night every Wednesday night; and Jill Polley’s Jack’s Snacks pop-up that offers a variety of different dinner specials on Thursday nights, which always feature an open jam.

But Brown says he’d like the Little House to serve food every night the bar is open, so he decided to finally move forward with a plan he’s been working on since the beginning of the year: starting his own burrito pop up.

The first night for The Burrito Stand was Tuesday, July 15, and it went so well that Brown set up shop again on Saturday night. From now on, he’ll offer his menu every Tuesday night and one weekend night a week, depending on what’s happening at the bar.

“I feel like a burrito is a perfect bar food because it’s contained and zesty and filling and you can take it to go,” he said.

Brown developed the initial menu himself. It contains four burritos, each one named after a different movie star. The Danny Trejo, for example, is stuffed with grilled steak, beans, a blend of cheeses, and salsa roja. The Jackie Chan is stuffed with grilled chicken, rice, green onion and Sriracha crema.

Burrito options will change, but customers will always find between two and four to choose from.

What makes the burritos special, Brown said, is the sauces. He makes all of them himself, and each burrito features its own sauce.

Brown also tried to focus on portability, he said. He’s not a fan of burritos that are overstuffed or poorly constructed and end up causing a mess. He prefers a burrito that’s wrapped tight and easy to eat on the go.

The Little House now serves food starting at 6 p.m. every Tuesday through Thursday night and either on Friday or Saturday. It stays open until the food’s sold out, which typically happens around 10 p.m., Brown said.

Besides Shamrock Lounge, Brown also owns a long list of bars and restaurants in Wichita, including Jerry’s Bar & Grill, Snug Harbor and John Barleycorn’s. He also is a part-owner in the sandwich shop Solly & Jude’s.

Tending to all those businesses keeps him busy, he said, but he finally turned his focus to his burrito aspirations. He’s had plenty of experience in bar and restaurant kitchens over the years, he said.

Brown’s now thinking about other food concepts he can add to the Little House schedule.

“I’ve got some other things planned that I want to do,” he said.
