Andy Boyd and Ian Crane are just a few weeks away from officially opening their new Central Standard Brewing to the public. They’ve passed all their inspections, finished all their construction and have brewed lots and lots of beer in anticipation of Aug. 21, which they’ve chosen as opening day.
The brewery will be set up in a 4,000 square foot building at 156 S. Greenwood, at the corner of Douglas and Hydraulic across from Hyde Park. When it first opens, it will have IPA, pale ale, sour beers, a Belgian triple and a Saison on tap. More beers will be added later.
The food menu at first will include meat and cheese plates only, Boyd said. After a month or so, the owners plan to add sandwiches and other food items.
During August, Central Standard will open from 3 to midnight on Fridays and noon to midnight on Saturdays. Starting in September, it will expend to its regular hours and serve from 3 to 10 p.m. Thursdays, 3 to midnight Fridays, noon to midnight Saturdays and noon to 5 p.m. Sundays.
