Favorites fuse in chicken and waffles

To Southerners (and residents of Los Angeles), chicken and waffles are two great tastes that taste great together.

To Wichitans, though, chicken is for dinner and waffles are for breakfast.

A few local restaurants are attempting to change that Midwestern mind-set by introducing a regional Southern dish that's rare in Wichita — chicken and waffles.

The dish is a sweet and savory combination that consists of pieces of fried chicken placed atop a standard breakfast waffle and drizzled with syrup.

It's being served at Da Louisiana Chicken & Waffle House, a new restaurant that opened last month at 1412 E. Ninth St.

It's the signature dish at Solo's, a new diner inside the Best Western Airport Inn at 6819 W. Kellogg.

And Piccadilly Grill at 7728 E. Central is serving it as one of its October specials.

When she first opened Da Louisiana Chicken & Waffle House, Denise Jones had a lot of explaining to do.

"It's kind of different," she said. "People were wondering how to eat chicken and waffles. There were a ton of questions."

Jones became familiar with the dish when she lived in California and worked at Roscoe's House of Chicken and Waffles, a legendary soul food chain in Los Angeles.

She serves her chicken bone-in and her waffles sweet and slightly cinnamony. The restaurant also offers tilapia, catfish and shrimp.

Chicken and waffles are a centerpiece of the new Solo's menu thanks to general manager Kim Madison.

A Food Network junkie, Madison had seen the dish featured on several cooking shows and was curious about it.

She was looking for a signature dish that would set Solo's apart and set her kitchen staff to work perfecting the recipe.

Solo's dish features boneless chicken strips atop Belgian waffles topped with powdered sugar and served with a side of butter-infused syrup.

Madison said she loved the dish and was sure her customers would, too. So far, it's earning attention from curious diners and rave reviews from the brave ones who order it.

"I love anything fried," Madison said. "This dish has the combination of the sweet and the savory, and that's what makes it fun."
