TRADER JOE'S MANGO CHICKEN


Trader Joe's is a supermarket chain that a lot of people wish would come to Wichita. It inspires such enthusiasm, in fact, that two fans named Deana Gunn and Wona Miniati wrote a cookbook called "Cooking With All Things Trader Joe's" ($29.95, Brown Bag Publishers). Let's Eat! is featuring recipes from it this week, slightly adapted to ingredients you can find locally.

Ingredients

2 skinless, boneless chicken breasts

1 jar (12 oz.) pineapple salsa

1 ½ cups frozen mango chunks

Directions

Preheat oven to 350 degrees.

Place chicken breasts in a baking dish, cover with salsa and top with mango chunks (don't bother thawing). Lightly drape with aluminum foil.

Bake 30-40 minutes or until chicken is done and juices run clear when cut.

Serve with jasmine cilantro rice, made by stirring ¼ cup freshly chopped cilantro into 2 cups cooked jasmine rice.

Makes 2 servings.
