SPRING WEEK: ORZO WITH FRESH LEMON AND HERBS

This side dish would go well with grilled fish, chicken and other light entrees. Orzo is a tiny rice-shaped pasta.

Ingredients

8 oz. orzo (about 1 1/3 cups)

1 tablespoon unsalted butter, at room temperature

½ cup chopped fresh herbs, such as flat-leaf parsley, cilantro, chives and basil

1 tablespoon fresh lemon juice

Kosher and freshly ground black pepper

Directions

Bring a medium pot of salted water to a boil over high heat. Add the orzo and cook according to package directions. Drain immediately and transfer to a medium bowl. Stir in the butter and mix well.

Stir in the herbs and lemon juice and season to taste with salt and pepper. Serve immediately.

Serves 6.
