This is easy because I've become a big fan of store-bought meatballs, especially when I find them on sale in the freezer case. The fact is, making meatballs at home is kind of time consuming and not guaranteed to produce better meatballs. Here's a dish that puts meatballs to good use.
Ingredients
1 lb. meatballs, cooked according to package directions
1 tablespoon butter
1 tablespoon flour
1 ¾ cups chicken broth
1 tablespoon sugar
2 bay leaves
½ cup heavy cream or half-and-half
Cooked egg noodles
Juice from 1 small lemon and fresh dill or parsley, optional
Directions
Melt butter in a large skillet. Add flour and cook 30 seconds. Stir in broth, sugar and bay leaves; bring to a simmer. Stir in cream and cooked meatballs and simmer, turning the meatballs occasionally, about 5 minutes. Remove from heat and add lemon juice and dill, if using.
Serve over cooked egg noodles.
