AUDACIOUS EATS WEEK: MACARONI SALAD

This week we're featuring food fit for a new president. Here's the basis of the Hawaiian "plate lunch," which Barack Obama learned to love while growing up in the 50th state. The plate lunch consists of this macaroni salad, two scoops of white rice and some kind of fried meat or fish slathered in brown gravy.

Coming tomorrow: a recipe to be served at Obama's inauguration.

Ingredients

2 lbs. potatoes

¼ cup unsweetened pineapple juice

Water

1 bag elbow macaroni

Lemon juice

½ cup red onion, chopped

2 stalks celery, chopped

2 carrots, grated

1 cup mayonnaise

4 tablespoons sweet pickle relish

Salt and pepper, to taste

1 teaspoon paprika

Directions

Boil potatoes in a deep pot of water with pineapple juice, until a fork can slide in the potatoes, but they don't fall apart. Cook with skins on, then allow to cool, and skins will peel off easily.

Cook a bag of elbow macaroni until al dente.

Cut the cooled potatoes into bite-size chunks, and squeeze fresh lemon juice all over.

Put all veggies and pasta in a bowl, and add mayonnaise.

Add relish, salt, pepper and paprika. Mix together, without pulverizing pasta or potatoes. Chill at least an hour.

If you're not making the whole plate lunch, consider serving over a bed of arugula, Obama's favorite leafy green.
