This quick-cooking, hearty winter soup is our third recipe for people who've made New Year's resolutions to lose weight. It's not quite meatless, but uses a small amount of sausage as seasoning rather than a main component. As in most soup recipes, the ingredients and amounts are flexible.
Ingredients
1 tablespoon olive oil
¼ lb. regular or turkey sausage, crumbled or cut into small pieces
2 tablespoons ketchup
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
1 tablespoon minced garlic
1 teaspoon dried oregano
1 can (16 oz.) chopped tomatoes
5 cups chicken stock
1 can (16 oz.) cannellini beans, with liquid
1 can (16 oz.) red kidney beans, drained
2 cups zucchini, cut into ½-inch pieces
2 cups baby spinach
1 ½ cups cooked bowtie pasta
Directions
Heat olive oil in soup pot. Add turkey, ketchup, onion, celery, carrots, garlic and oregano, cooking about 5 minutes or until vegetables are aromatic.
Add tomatoes, chicken stock, beans and zucchini. Bring soup to a boil, then reduce heat and simmer about 10 minutes. Add spinach and cooked pasta, cooking until spinach is wilted.
Serve with crusty bread.
