This is our second recipe from a new cookbook written by two fans of the Trader Joe's supermarket chain. They suggest serving it with a zinfandel or a dry Japanese beer.
Ingredients
4 (6-oz) salmon fillets
½ cup teriyaki sauce
1 tablespoon Dijon mustard
2 green onions, chopped
Directions
Preheat oven broiler on high setting. Position rack about 6 inches from the heat.
Combine teriyaki and mustard. Pour over salmon and let marinate for 10 minutes while oven is heating.
Place fillets on a foil-lined baking sheet, skin side down. Discard used marinade. Broil salmon for 6 minutes or until fish flakes easily.
Top with green onions
NOTE: Fish can also be grilled in a pan over medium heat, about 2-3 minutes per side.
