Wink Hartman Sr. and Morrie Sheets have started working on their sixth Wichita-area Jimmy’s Egg, and they’ve got more planned after that.
“We’re growing,” Sheets says.
Their latest Jimmy’s will open in 3,750 square feet at the northeast corner of Central and Webb where a gas station and a nutrition business most recently were.
“It’s a perfect location for us,” Sheets says.

He and Hartman already have a Jimmy’s at 21st and Rock that Sheets says “is just killing ’em.”
They also have Jimmy’s restaurants across from Via Christi Hospital St. Joseph, at Douglas and Hydraulic, at Central and Tyler and near Maple and West.
The new Jimmy’s will open in December or January with seating for about 130.
Like all the Jimmy’s restaurants, the business will be open from 6 a.m. to 2 p.m. every day of the week. The restaurants sell breakfast and lunch items.
Sheets and Hartman also are negotiating on a south-side site. They’ve been looking along Pawnee between Broadway and Seneca.
They’re interested in Derby, too.
“I think there’s a big void in Derby,” Sheets says. “We made an offer on a deal in Derby, but it wasn’t accepted.”
He says they’re not giving up on the city, though.
“And we’re looking hard in El Dorado,” Sheets says.
They’re also negotiating in Emporia.
Sheets says they’re going to open at least two this year and possibly three. He says they won’t stop there.
“The plan is to reach out from there to go to Hutchinson and then Salina.”
