IHOP franchisee Mohamad Touffaha has approval from the chain to open three more of the restaurants in the next three years.
The first will be in the Derby Marketplace in Derby. Touffaha says he’ll open by late next year.
“It’s going to be right by the Target area,” he says. “Right in that neighborhood.”
Touffaha will open another new IHOP in Merriam, near Shawnee.
“There’s an existing IHOP in there,” he says. “I’m taking over the right for IHOP.”
The existing lease is up in September, Touffaha says. He’ll build a new IHOP somewhere other than the existing site.
Touffaha also has plans for an IHOP in Blue Springs, Mo.
Currently, he has six of the restaurants, including ones in Wichita on East Kellogg and North Rock Road and ones in Hays, Garden City, Dodge City and Leavenworth.
“I’m building right now also in Liberal, Kansas,” he says.

He’s also opening a Popeyes Louisiana Kitchen in Garden City next month.
Touffaha is working on bringing a new chain to Wichita that used to be in the city but isn’t anymore. He says he can’t say much more until a deal is done.
“We’re going to bring it back – hopefully.”
