Simon’s role with Freddy’s has grown along with the company, from supervisor at the first location in west Wichita to his newest job working with more than 80 franchises in 22 states.
“There are three of us that have been with the company since day one, besides the owners,” he said.
Simon, 33, is the son of Freddy’s co-owner Randy Simon and grandson of the company’s namesake. He grew up in Wichita, working for his father’s Panera restaurants, then left to earn a business degree from Chaminade University in Hawaii – best known, he said, as host of the annual Maui college basketball tournament.
After helping open the first Freddy’s, Simon became general manager of the second location, on Rock Road. He later was promoted to regional manager for the Wichita and Kansas City markets, and then to director of operations.
In his new role, he said, “I’m going to maintain a lot of duties I had before with some increased responsibility – just with a little bit more on the desk, I guess.”
Freddy’s expects to open its 90th store, in Houston, next month.
Outside of work, Simon said he enjoys spending time with his two young children, playing golf, listening to live music and cheering for the St. Louis Cardinals.
