Greens are high in Vitamin K, low in carbs and surprisingly delicious in just the right recipe. This week, we'll try some interesting ways to eat greens beyond the lettuce salad. Today's recipe comes from The Kitchn and features arugula.
1 1/2 pounds new potatoes

1/2 cup whole milk yogurt
1/4 cup mayonnaise
2 large shallots, peeled and thinly sliced
1 large bunch arugula leaves, roughly chopped
1 small bunch fresh dill, finely chopped
