There's little, it appears, that Dempsey's Burger Pub's head chef Bill Crites can't do, and he's proving it this week with a weird but wonderful new burger that's sending fans of the restaurant at 550 N. Rock Road into a social media tizzy.
He's calling it "The I'm Fondue You Burger," and it features a hollowed-out hole in the top that's filled with hot fondue then stuffed with fries for dipping.
The restaurant posted a picture of the new burger, which it's selling at its east-side store, on Wednesday, and customers expressed shock and awe.
"How does one eat this?" one bewildered customer asked on Facebook.
Crites said he can't take credit for the burger's concept, though. Dempsey's owner Steve Gaudreau had a fondue burger somewhere when traveling and challenged Crites to take a crack at making one himself.
Crites said his new kitchen manager, Jordan Frantz, came up with the fondue recipe, which he described as "a nice wine-y fondue with Chardonnay, Swiss and Parmesan cheese." The half-pound burger is constructed, then a hole is punched through the middle to accept the cheese, the fries and a Parmesan crisp.
The burger is running just as a special for now, Crites said, and just at the east-side Dempsey's. But it's "getting a great response." If the frenzy continues, they might add it at the Clifton Square Dempsey's, too, he said.
