Four about-to-open restaurants

1. Saigon Bistro, 3123 E. Pawnee, 316-683-0035: A new Vietnamese restaurant serving traditional dishes will open today. Hours are 10 a.m. to 8 p.m. Sundays, Mondays, Tuesdays and Thursdays and 10 a.m. to 9 p.m. Fridays and Saturdays.

2. Jimmy John's: Wichita's third location of the popular sandwich shop is scheduled to open at Central and Hillside on Wednesday.

3. Mediterraneo, 505 S. Webb Road: This new restaurant will take over the space where Italian Garden East just closed. It will serve pastas and other Mediterranean-style dishes. The restaurant is scheduled to open in a couple of weeks.

4. Dudley's Sports Bar and Grill, 8550 W. 21st St.: The space vacated by El Gaucho Steakhouse will be turned into a new sports bar by the owner of O'Brien's, 5205 E. Kellogg, and the businesses will be very similar. It's scheduled to open in early August.

Third Jimmy's Egg

The third location of popular breakfast spot Jimmy's Egg opened Wednesday at 7906 E. Harry. Its hours will be 6 a.m. to 2 p.m. daily. Wichita's other Jimmy's Eggs are at 7777 E. 21st St. and 8728 W. Central.

Fish tacos>

They're not on the menu so you have to ask, but if you do, Frida's Mexican Grill at 1580 W. 21st St. will make you an order of fish tacos, made with grilled tilapia. The troublesome road construction near the restaurant is now complete, so it will be easier to get there, too.

Seafood tapas >

The Olive Tree and Chelsea's at 2949 N. Rock Road offer seafood tapas every Friday from 5:30 to 9 p.m. The small plates, which include everything from mussels to shrimp pizza to oysters on the half shell, cost about $7 to $9 each. For more information, call 316- 636-1100.
