Wichita can go weeks and weeks with nothing new to eat.

Then, everything opens at once.

Three interesting and noteworthy restaurants have either just opened or will open in Wichita during the next week.

Among them:

Twelve Restaurant & Bar, 12111 W. Maple, 316-440-2812

Twelve Restaurant & Bar is the first restaurant Bryce Kuhn has owned, but it’s hardly the first one he’s run.

Kuhn, who will open the new west side “casual upscale” restaurant on Monday, has worked as a manager for years at places such as Bonefish Grill, Newport Grill, Ya Ya’s and Lakeside Club. Twelve, which got its name from Kuhn’s lucky number, is in the former Shorty Small’s space in the strip center at 119th and Maple that also houses Kanai.

But the restaurant, which has been completely remodeled, looks nothing like Shorty Small’s. The dining room has been transformed into a classy space with new carpeting, paint, lighting and decor.

Kuhn dreamed up the menu along with his general manager, Patrick McMahon, and it features burgers, sandwiches, steaks, pastas and seafood. Kuhn says his favorite dishes on the menu include the house smoked salmon from the appetizer menu, which is served with toast points and tarragon remoulade, and the sweet corn risotto, a side dish that is his own recipe.

The restaurant also has a full bar, featuring 12 signature cocktails and 50 bottles of wine, and a patio. Hours will be 11 a.m. to 9 p.m. Mondays through Thursdays, 11 a.m. to 10 p.m. Fridays and Saturdays, and 11 a.m. to 3 p.m. Sundays.

Freebirds World Burrito, 410 N Hillside, 316-440-4878

Wichita’s first Freebirds is scheduled to open Thursday.

If you’ve eaten at Chipotle, you’re already familiar with the concept behind Freebirds, a build-your-own-burrito chain that got its start in Texas and California. (There are also five Freebirds in the Kansas City area.) It’s a lot like Chipotle in that customers go through a line and choose the ingredients that will be stuffed into their burritos, but Freebirds has a few extras.

It offers four different burrito sizes: (hybrid, Freebird (the standard size), monster and super monster.) There are also four different choices of tortilla flavors: wheat, flour, spinach and cayenne. Fillings include hormone-free, grass-fed light- and dark-meat chicken, slow roasted carnitas, steak and more. Plus, the restaurant offers 40 fresh vegetables and seven salsas, including one called “death sauce.”

Burritos average about $10, and the restaurant also will serve beer and margaritas. Hours will be 11 a.m. to 10 p.m. Mondays through Thursdays, 11 a.m. to 10:30 p.m. Fridays and Saturdays, and 11 a.m. to 9 p.m. Sundays.

Bud E. Roosters, 8918 W. 21st St., 316-613-3780

Bud E. Roosters is a new chicken restaurant will open Tuesday in the spot next to Orange Leaf near the west-side Warren Theatre. It will serve chicken sandwiches, chicken nuggets, hand-cut fries and a whole lot of sauces.

The space previously held Go! Steaks, and interior construction of Bud E. Roosters has been underway for several months.

It’s owned by former Emerson Biggin’s owner Dave Dunn, who hopes it will be the first of a franchise.

Hours will be 10:30 a.m. to 10 p.m. Sundays through Thursdays and 11 a.m. to 11 p.m. Fridays and Saturdays.
