Three fine dining additions

1. Siena Tuscan Steakhouse, inside Ambassador Hotel, Douglas and Broadway: The upscale restaurant going into the under-construction Ambassador Hotel is getting closer to finished. It will feature a dining room with a black/red/gray color scheme that seats 60 with room for another 35 in the bar. The menu is tentative and won’t be finalized until chef Marshall Roth does final-stage recipe testing and VIP tastings during the next several weeks. The current version includes items such as a panzanella salad, first-course pasta dishes such as mushroom risotto, several steaks, a pork osso buco dish, a seafood stew known as cioppino, and “duck fat fries,” which are French fries cooked in duck fat. The restaurant will have a “soft opening” after Christmas, which is for invited guests. Then, it’ll be used as part of the hotel’s grand opening New Year’s Eve event. It should be open for regular service to the public on Jan. 1, Roth said.

2. Woodfire Grille at Kansas Star Casino, Mulvane: The casino’s fancy, sit-down restaurant is a contemporary steakhouse that will be led by executive chef Adam Correa, whose resume includes stints at Hotel Bel-Air in Los Angeles, the Marriott’s Camelback Inn in Scottsdale, Ariz., and the Phoenician, a five-star resort in Scottsdale. It is set to open Dec. 21.

3. Firebirds Wood Fired Grill: Lone Star Steakhouse founder Dennis Thompson plans to open a franchise of this chain at the former Brooks Brothers store at the Waterfront, 13th and Webb. It will specialize in steaks and wood-fired dishes with a Southwestern flavor. It’s scheduled to open in May or June.
