INGREDIENTS
2 dried ancho chilies
1/4 cup cashews, raw or roasted
1 cup chicken broth
2 whole chicken legs plus 1/2 chicken breast (about 1 1/2 pounds total)
2 tablespoons olive oil
1 large onion, chopped coarse
3 garlic cloves, chopped fine
1 tablespoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
3 tablespoons chopped fresh coriander sprigs (wash and dry before chopping)
14 1/2-oz. can diced tomatoes with juice
1/2 cup cashews, raw or roasted
1/2 oz. fine-quality bittersweet chocolate (not unsweetened) or semisweet chocolate
1 cup canned kidney beans, rinsed and drained
