DELICIOUS VEGGIE WEEK: SPINACH SAUTE

Sometimes, it's hard to persuade ourselves to eat our veggies. But if we cook them just the right way, it can be surprising how delicious they are. This week, we'll share a few recipes that will help make eating what's good for you a pleasure rather than a chore. Today's comes from the Ladies' Home Journal website.

INGREDIENTS
1  tablespoon  olive oil
1/4  cup  chopped shallots
2  10-oz. bags  fresh spinach
1-1/2  teaspoons  balsamic vinegar
1/4  teaspoon  salt
1/8  teaspoon  freshly ground pepper
