DELICIOUS VEGGIE WEEK: ASPARAGUS WITH HOLLANDAISE SAUCE

Sometimes, it's hard to persuade ourselves to eat our veggies. But if we cook them just the right way, it can be surprising how delicious they are. This week, we'll share a few recipes that will help make eating what's good for you a pleasure rather than a chore. Today's comes from the website Simply Recipes.

1 bunch of asparagus (about 1 lb)
10 tablespoons unsalted butter (1 stick plus 2 Tbsp)
3 egg yolks
1 tablespoon lemon juice
1/2 teaspoon salt (skip if using salted butter)
Pinch of cayenne
