DELICIOUS VEGGIE WEEK: LEMON-BASIL BEET SALAD

Sometimes, it's hard to persuade ourselves to eat our veggies. But if we cook them just the right way, it can be surprising how delicious they are. This week, we'll share a few recipes that will help make eating what's good for you a pleasure rather than a chore. Today's recipe comes from Redbook magazine.

INGREDIENTS

6 medium beets, cooked
3 tablespoons olive oil
2 tablespoons fresh lemon juice
2 large basil leaves, julienned, plus more for garnish
2 slices red onion, separated into rings
Parmesan cheese
Salt and pepper, to taste
