DELICIOUS VEGGIE WEEK: GINGERED CARROTS WITH CUMIN AND BASIL

Sometimes, it's hard to persuade ourselves to eat our veggies. But if we cook them just the right way, it can be surprising how delicious they are. This week, we'll share a few recipes that will help make eating what's good for you a pleasure rather than a chore.

INGREDIENTS

1 lb 1.5 oz small-sized young organic carrots
5 teaspoons olive oil
1 teaspoon honey
2 inches ginger root, peeled and thinly grated
1.5 teaspoons ground cumin
1 teaspoons basil, chopped
3 garlic cloves, thinly grated
Sea salt
