ZUCCHINI WEEK: GARDEN LASAGNA

With summer heat bearing down on so many back yard gardens, zucchini is about the only crop thriving. This week, we'll share ideas for turning zucchini into something zu-yummy.This recipe was shared (and enthusiastically recommended) by a zucchini-growing reader named Kim.

INGREDIENTS

6 cups diced zucchini, cooked untill tender but still crisp
1/2 lb. hamburger
1 clove minced garlic
1 8 oz. can tomato sauce
1 t. salt
1/4 t. oregano
1/4 t. basil
1 cup cottage cheese
1 egg beaten
1 tablespoon parsley
1 cup mozzarella cheese
1 1/2  c. bread crumbs

DIRECTIONS

Brown hamburger and garlic. Stir next 4 ingredients into browned hamburger. Combine cottage cheese, egg and parsley.

 Place 1/2 of zucchini in greased 8-inch square baking dish. Sprinkle with 3/4 cup bread crumbs. Spread with 1/2 of cottage cheese mixture, then 1/2 of beef mixture.  Sprinkle with 1/2 c. shredded mozzarella cheese.  Repeat layers, except cheese.  Bake at 350 degrees for 25 minutes.  Sprinkle with 1/2 cup of cheese and return just to melt.
