Three restaurants cited by KDHE for violations

Three Wichita food service businesses have been fined by the Kansas Department of Health and Environment for allegedly violating the state's food service regulations.

KDHE issues fines when an inspector documents the same violation on consecutive visits. Fines are subject to appeal.

Here are the businesses, fines and alleged violations:

• El Centenario, 2201 W. Douglas, $500 fine for operating a food service establishment without a license. The fine was issued to Bar Ah.

The business could not be reached for comment.

• Dutch Mills, 3200 Southeast Blvd., $500 fine for operating a food service establishment without a license. The fine was issued to Quality Concessions of FB&B.

The business could not be reached for comment.

• Spear's Restaurant, 1930 N. Woodlawn, $1,050 fine for employees' failure to wash hands as necessary, presence of adulterated food, and failure to clean food-contact surfaces properly.

Owner Randy Spear said Thursday that the violations had been corrected and policies and procedures had been changed to make sure they didn't recur. He said he still was in negotiations with KDHE about the fine.

Restaurants have about three weeks to file an appeal or pay the fine.
